Strawberry Nut Bread- our first recipe post





Strawberries are in season now and it would be a great time to use them for this quick and easy strawberry nut bread.  It is easy to freeze and use for a quick breakfast or brunch item.  Pair it with the cream cheese spread and you are in heaven!   

Strawberry Nut Bread

3 cups all purpose flour
1/2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. salt
1/4 cups vegetable oil
3 eggs
2 cups sugar
1 cup chopped fresh strawberries
1 cup toasted chopped pecans

Combine first 4 ingredients; set aside.  Combine oil, eggs, and sugar in large bowl of electric mixer; mix well.  Gradually add dry ingredients to creamed mixture, stirring just until all ingredients are moistened.  Stir in strawberries and chopped pecans.

Spoon mixture int 2 greased and floured 8 1/2 x 4 1/2  (3 inch) loaf pans.  Bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean.  Cool in pan 10 minutes; remove to wire rack and cool completely.

Strawberry Cream Cheese Spread

 8-ounce package cream cheese, softened
1 cup powdered sugar, sifted
1/4 mashed strawberries

Mash strawberries and add 2 T. sugar.  Set aside so that the berries will absorb sugar.  Beat together cream cheese and powdered sugar.  Add in strawberries with juice.  Spread on sliced strawberry bread.
